Carrot is one of the important root vegetables which contain carotenoids in major amount and dietary fibers with considerable amounts of several other functional constituents.Presence of such unique constituents in carrot provides significant health-promoting properties. It also consists of sugars, salts and proteins naturally occurring in red beets.
